The Cooper was the barrel-maker at the fort. Several thousand barrels a year were made to pack salmon which the Indians brought to the fort to trade.
The barrels of salmon were sent to Hawaii and San Francisco using Hudson Bay Company ships.
The Salmon were pickled in the barrels, preserved in a brine. Brine is a very salty water.
